HOT CORN FIESTA DIP
PERFECT FOR PARTIES
INGREDIENTS: – 2 cans corn, drained – ¼ cup diced yellow onion – 1 tsp garlic powder – 1 tsp cayenne pepper – 4 oz. cream cheese, softened – ½ cup Greek yogurt – ½ cup Mozzarella cheese, shredded – 1 cup cheddar cheese, shredded and divided
1. Preheat oven to 350 degrees and coat a baking dish with nonstick spray. 2. In a large bowl, mix together corn, onion, garlic powder and cayenne pepper. 3. Add cream cheese, Greek yogurt, Mozzarella cheese and ¾ cup cheddar cheese. Fold and make sure all ingredients are well-combined. 4. Pour the mixture into the prepared dish and sprinkle with remaining cheddar cheese (about ¼ cup). 5. Bake for 25 minutes. Serve hot with crackers and chips.
