– 1 red bell pepper – 1 orange bell pepper – 1 yellow squash – 1 zucchini – 1 ear of corn – 1 tablespoon olive oil – 1 teaspoon salt – 1 teaspoon pepper – 1 teaspoon garlic powder – 2 heads romaine lettuce – 1 cup mozzarella cheese – ¼ cup olive oil – 2 tablespoons white wine vinegar – 1 tablespoon lemon juice – 2 cloves garlic minced – ½ teaspoon dried oregano – ½ teaspoon dried basil – ½ teaspoon salt – ½ teaspoon black pepper – ¼ teaspoon onion powder – ¼ teaspoon red pepper flakes

1. Brush the corn with olive oil and season with salt and pepper. 2. Cut the vegetables into evenly thick slices. 3. Toss the bell peppers, squash, and zucchini in the remaining olive oil and season with salt, garlic powder, and pepper. 4. Place all the vegetables on a hot grill and cook for two to three minutes on each side. 5. Remove the vegetables from the grill. 6. Combine the grilled vegetables with the lettuce and mozzarella cheese in a large bowl. 7. Make the dressing by combining all the dressing ingredients in a small bowl. Whisk to combine, then pour over the top of the salad ingredients and toss to coat..
