Easter Pineapple Bread  Pudding


This pineapple bread pudding is an amazingly easy Easter recipe with only 6 ingredients and 10 minutes of preparation. Just slightly sweet, it works as a dessert, side dish or even a breakfast! It's great anytime of year, but we love to make it during the holidays. 

Preheat oven to 350 and grease a 2-1/2 quart casserole dish with nonstick cooking spray. Set aside. Add eggs to a large bowl and beat well.

Add sugar, butter, pineapple and cinnamon to mixing bowl and mix well. Use a stand mixer if needed.

Fold in bread and mix to evenly coat.

Pour into prepared baking dish.

Bake for 30-35 minutes or until knife inserted in the center comes out clean. Remove from oven and let stand to cool until warm. Serve warm topped with whipped topping if desired.
