BISQUICK COFFEE CAKE

CAKE INGREDIENTS: – 2 cups Bisquick baking mix – 2 tablespoons white sugar – 2/3 cup milk – 1 egg – 1 teaspoon vanilla TOPPING INGREDIENTS – 1/3 cup Bisquick baking mix – 1/3 cup brown sugar – 1 teaspoon ground cinnamon – 2 tablespoons cold butter

– Preheat oven to 375 and grease an 8x8 square pan with nonstick cooking spray and set aside. – In a mixing bowl, combine 2 cups Bisquick, white sugar and mix well.

- Add milk, egg and vanilla and mix.

- Pour into prepared pan.

- In a medium bowl, combine 1/3 cup Bisquick, brown sugar, cinnamon and butter.

Use a pastry blender or two forks to combine ingredients and mash butter into small crumbs.

Sprinkle on top of cake.

- Bake for 18-20 minutes or until toothpick inserted in the center comes out clean. Cool until warm and serve.
